RAW PUMPKIN BITES

I’m pretty sure that the first recipe I wrote for Marina’s blog was a recipe on energy balls… well, I’m back with another one! I’ve created a sweet treat that’s perfect for this time of year, when you need a healthy treat amidst all of the Christmas decadence. These balls willkeep you “snacking” happy & healthy!

Perfect to whip out of the freezer when guests show up unannounced, easy to make, good for you, and sweetly satisfying. Plus, pumpkin is a fruit, making it highly nutritious and rich in vitamin A (great for our immune system, and helps to keep our internal organs working properly).

Don’t forget to make a double batch, because you might be forced to share them!

Store them in your freezer for easy snacking.

Recipe:

2 cups raw almonds

about 16–20 Medjool dates (or regular dates soaked in hot water for 30 min)

1/2 cup pure pumpkin puree

1/4 cup chia seeds

1/3 cup unsweetened shredded coconut

1–2 tsp pumpkin pie spice mix

splash of pure vanilla extract

pinch of pink Himalayan salt

 

1- Blend all of the ingredients in a food processor, or blender, until they all come

together and you get a sticky consistency.

2- Roll them into bite-size balls.

3- Store them in the freezer, in an airtight container. They’re best eaten cold!

A highly skilled dancer, Shana received her ballet training at l'École supérieure de danse du Québec and Le Jeune Ballet du Québec. Her love of dance flourished and she began her 10 year professional career with Les Grands Ballets Canadiens. Shana was a dancer and choreographer on Radio-Canada’s Le Match des Étoiles (Dancing with the Stars). She also danced in the Quebec movie Sur le rythme, and was part of many TV shows and musicals. Her accomplishments don’t end there. She was Veronic Dicaire’s dance captain for 3 years in Vegas, Europe, and Quebec. Her mom had a passion for cooking and she passed it down to Shana and her two sisters. Shana became a mom to little Grey in May 2017 and she currently teaches a barre fitness class at b.cycle’s studio in Old Montreal.
